Growth in yogurt, desserts and ice cream

According to RTS Resource expenditure in this segment is forecast to reach €32.3bn by 2011, a growth rate of 1.1% per year.

While the Western European market for yogurt is forecast to grow by an additional €0.3bn between 2006 and 2011, greater growth is forecast for chilled/cream desserts (+€0.7bn) and ice cream and frozen desserts (+€0.7bn).

One segment driving the yogurt market in Europe is pro-biotics although this is not without controversy. Despite being beneficial to health, many products have been criticised for containing too few bacteria to have any practical effect.

In terms of ice cream, it is likely that manufacturers will continually look to new, novel ingredients, combinations, shapes and packaging to increase consumer appeal. In addition, a healthy sub-sector is expected to develop, bringing increased demand for sweeteners, speciality fats, fat substitutes and bulking agents.

Taken from The Big Food Guide 2011, the essential reference for the food industry available today priced £450 / €700.
