Key drivers in flavours



According to RTS the main areas of focus for the future are:

  1. Technology needs to keep updating to improve extraction, profiles of the flavours and stability

  2. Soft drinks are the largest market yet has the lowest margins

  3. Development of added value confectionery, cereal and baked goods

  4. Specialist areas

  5. Clean Labels

  6. New and novel products

  7. Improved application and flavour delivery

  8. Combination of flavours with health and other functional ingredients

The global market for flavours was valued at €6.16bn in 2005 according to RTS Resource, with the USA dominating usage. Germany and the UK are still important markets in Western Europe although emerging markets such as China, Mexico and Brazil are expected to command a greater share.

There are opportunities for adding value through innovation in ways such as complex / aspirational flavours, for example Acai and Goji berry which are showing growth, and stable natural alternatives. A shift towards natural components and natural flavours such as herbs, spices and extras will also affect the flavours market.
